General Brewing Principles
Water Quality
The quality of water significantly impacts the taste of your tea:
- Best Choice: Fresh spring water or filtered water
- Avoid: Distilled water (lacks minerals), hard water (too many minerals), chlorinated tap water
- Temperature: Let freshly boiled water cool to the appropriate temperature for your tea type

Step-by-Step
- Warm the Vessel: Rinse your teapot or cup with hot water to warm it.
- Add Tea: Place the appropriate amount of tea leaves in your vessel.
- Rinse: Quickly rinse the leaves with hot water and pour it off (this awakens the tea).
- First Infusion: Add hot water and steep for 1-2 minutes.
- Subsequent Infusions: Increase steeping time by 30 seconds for each infusion.
- Enjoy: Pour the tea into your cup and savor the aroma and flavor.
Raw Pu-erh Brewing
Raw pu-erh is unfermented tea that offers complex, evolving flavors. It can be steeped multiple times, with each infusion revealing new characteristics.
